Salad Dressing......

I found a recipe yesterday in my inbox for a homemade dressing that looked like fun.
I have to tell you that dressing is a big deal to me. I love to eat salad but it MUST have some sweet yummy goodness to go with all of the healthy nutritious food. To me dressing is the thing that blends all of the flavors together. And I really prefer it being creamy. Vinaigrette will occasionally find a place on my plate but a thick dressing is always my first grab.

I have sometimes made dressing at home if a certain salad I am making calls for it. But for the most part I have been intimidated by making it at home. After making this new recipe today however, dare I say I am not intimidated anymore?.....

The recipe is from a sweet, amazing and inspiring young woman named Kelly over at Nosh and Nourish.  She has an amazing list of tasty and good for you recipes. Here is her recipe for my new favorite dressing....

Honey Sesame Dressing
1/2 cup chickpeas (garbanzo beans) drained and rinsed
1/4 cup sesame oil
1 TBSP soy sauce 
2 TBSP honey
1 TBSP apple cider vinegar
1/2 TBSP minced garlic

Kelly suggested mixing the list of ingredients in a bowl with an immersion stick. I don't happen to have one but it all mixed really nicely in my blender.
That is it....dump it all together and blend it to smooth oblivion. Then enjoy!

Tonight's dinner......Yum! My tummy is so happy!

Twisted Green Beans Juice....

Today the snow and ice is melting but the city is nothing close to being normal just yet. My husband, a truck driver by trade, had a rough go of it at work today with icy streets and highways. Poor guy. He is so dedicated.

Before I realized that appointments and school schedules would not be back to normal, I jumped at the juicer this morning and created a yummy recipe that kept me going well into the afternoon. Give it a try and tell me what you think......

Twisted Green Beans Juice
5 carrots
1 Granny Smith Apple
1 Red Delicious Apple
1 handful green beans
1 inch fresh ginger root

Snowed In.....

It rarely ever happens before Christmas and it isn't often that we get snow here in this part of the NW. But this past weekend everything shut down and life became a flurry of white. From Thursday afternoon until late Saturday evening there was snow, wind more snow and then it all got topped of with a thick layer of freezing ice rain.

I think we probably have 4 to maybe 5 inches of snow here and it is all so pretty. We haven't been completely housebound as my hubby has a 4x4 jeep that seems to conquer the worst road conditions with ease. It has been cute to watch him smile with mischievous delight when asking if I need him to run to the store for anything.

This morning when I got up to the slow drip of melting coldness, I craved something good and green to take the edge off of the unwise snacking we have been doing.

  Lord what can we create this morning that is a bit out of the norm while using up left overs in the fridge?
The answer came back fun and clear.......

 I ran these ingredients thru my juicer:
4 celery stalks
1.5 cucumber
1 red delicious apple
1 granny smith apple
1 pear
2 handfuls green beans
6 romaine leaves
2" fresh ginger

Then I brought out my blender and poured 3 cups of the juice into it along with:
1 banana
1 handful of spinach
3 handfuls frozen blueberries


I did that twice to make breakfast and lunch for both hubby and myself. 
Wow it is really good! 
The green beans give it an incredible fresh kick that washes away the winter freeze outside.  
Thank You God for this great surge of green celebration!
